Breakfast Sausage 1 (15-oz) can beans (drained, reserve liquid) (pinto, kidney, blackeyed peas, etc) 1/2 cup GF potato flour* 1/2 cup canned mushrooms (drained), finely chopped (measure mushrooms before chopping) 1 tsp onion powder (or to taste) 1 Tbs tomato paste 1/2 tsp crushed fennel (opt) 1 tsp dried parsley 1 tsp crushed dried rosemary 1 tsp dried sage 1/2 tsp dried thyme 1/2 tsp salt (smoked or plain) 1/8 tsp pepper Dash cayenne (opt) oil or pan spray In a large bowl, mash beans and potato flour together. Mix in mushrooms, peas, and potato flour. Mix in seasonings. Add reserved liquid as needed to make a mixture that can be formed into sausages that stay together, not too wet or too dry. Roll mixture into 10 sausage shapes. Heat frying pan on medium-low heat. Add a little oil, or spray pan with pan spray. Fry the sausages, rurning often, until browned.
