I did not intend on buying any specialty GF products, but at the grocery store today I saw a new Betty Crocker Gluten Free line. The brownies called for 1/4 c melted butter and 2 eggs. I used 1/4 c coconut oil and 2 Ener-G replacements. It is a greasy gooey gritty mess (but has great reviews online).
1)Does coconut oil sub 1:1 for butter or should I have used 3 TB? 2)Does Ener-G somehow not work in all GF recipes?

Different topic - I love cornbread right now, but I don't like any bitter taste in it, so I usually use 1 1/4 c flour and 3/4 c cornmeal. Is corn flour just as bitter as cornmeal? Because I was thinking about trying it with that, but not if it's bitter.
