Copied from an unlinkable website... ======================== Vegan Breakfast Strata 1 pkg firm tofu, cubed 1 red bell pepper 1 orange bell pepper 1 yellow bell pepper 1 C sliced mushrooms 1 medium yellow onion, diced 1 pkg vegan breakfast sausage (opt) 1 bag frozen hash browns 1 block Follow Your Heart vegan cheese (opt) 1 T minced garlic Salt and pepper to taste Olive oil (for sauteing) Other spices as desired Preheat your oven to 450 F. In a lightly oiled skillet over medium to medium-high heat, saute the veggies and the garlic until the onions are translucent and the mushrooms and peppers are tender. Add the tofu, salt, pepper, and desired spices and continue to saute, mixing gently every few minutes, until the tofu begins to get golden around the edges. Add the mixture to a 9″ x 13″ glass baking dish. Add more oil to lightly coat the pan and brown the faux sausage for about 5-8 minutes. Add this to the baking dish and toss with the tofu/veggie mixture. If you are adding the vegan cheese, shred it and throw it on top of the mixture now so it will absorb the heat from the previously cooked ingredients. Add a little more oil to the pan and cook the potatoes until they are heated through and just barely beginning to brown. Add these to the top of the mixture in the pan and spread them evenly across the surface. Bake the mixture for approximately 30-35 minutes, allowing the cheese to melt and the potatoes to finish cooking. If the potatoes still aren’t crispy but the rest of the dish seems done, you can turn the broiler on for a few minutes to get them good and crunchy. Just make sure you keep an eye on it so it doesn’t get burnt! From Vegan on the Cheap
