Hi, I'm trying to follow a Dr. Esselstyn (a lot like D. Ornish) diet of no oil vegan and make pancakes. When I use the receipes from his book: whole wheat flour, rolled oats, cornmeal, baking powder, baking soda, banana, vinegar, soy milk, I get a big gooey mess that I can't scrape off my non-stick fry pan without the whole thing falling apart and sticking to my spatula and everything else it comes in contact with. I wait until water sizzles on the pan before pouring on the batter but that doesn't help. I've tried a hotter pan but that causes the bottom of the pancake to turn black and the middle stays gooey. If I use a lower flame and cook for a longer time, it still comes out a big mess. We eat them and they taste good but they don't look like pancakes, they look like muffins gone bad. In the years when I cooked and ate regular pancakes made with eggs, oil, butter, etc. they always came out looking good. I just can't seem to get the hang of this no oil pancakes. Do you have any suggestions? Thanks, Bob
