Check health food stores for dairy-free marg.
They do exist, if elusive.

---

The most 'buttery'-tasting oil is cold-pressed
corn oil.

Use as a topping, not to fry with.

---

Coconut oil is not particularly 'buttery', but
it imparts a wonderful flavor to rice.

----

A drop of imitation butter flavoring added
to 1/4 cup (or so) of veg oil makes a good
butter sub for topping rice, vegs, etc.

Use only a drop or so. I'm not kidding.
That stuff is very intense, and too much
is definitely not better than too little!
