My general rule is -- don't keep any fresh,
cooked foods in the fridge for more than 3 days.

They are probably "safe" longer than that,
but they definitely lose flavor.

BTW, baked potatoes freeze pretty well.
(Notice the frozen "skins" in the store.)
Cut in half (long way), wrap, and freeze.
Reheat gently until hot throughout.
