My general rule is -- don't keep any fresh, cooked foods in the fridge for more than 3 days. They are probably "safe" longer than that, but they definitely lose flavor. --- BTW, baked potatoes freeze pretty well. (Notice the frozen "skins" in the store.) Cut in half (long way), wrap, and freeze. Reheat gently until hot throughout.
