I have used this recipe for years and got from a friend who was married to an hispanic. I was told it was authentic. It is really a great enchilada sauce.

3 T. oil
2 T. flour
2 T. chili powder
2 cups water or broth
1 can (15 oz.)tomato sauce
1/4 tsp. oregano and salt
1/2 tsp. cumin
In large skillet heat oil; stir in flour into oil until smooth; cook, stirring constantly for 1 minute or til golden. Stir in chili powder. Gradually stir in water tomato sauce, oregano, salt and cumin. Simmer 15 min. Makes about 3 1/2 cups.

For those who don't like to use oil, just use oil or vegetable broth.
