Tomato Basil Soup
2 lbs fresh tomatoes, seeded and chopped (or use
canned)
1/8 tsp onion powder
1 - 3 tsps dried basil (to taste)
1/2 tsp sugar or other sweetener
1 cup broth or water
1 Tbs veg Parmesan (optional)
In a saucepan, put tomatoes, herbs, and sugar.
Simmer for 15 minutes, stirring frequently.
Put in processor or blender, add broth or water,
and process to a smooth consistency.
Return to pot, and heat until hot. Do not boil.
Serve, topped with a sprinkling of Parmesan, if
desired.
VARIATION:
Creamy Tomato Basil Soup
2 lbs fresh tomatoes, seeded and chopped (or use
canned)
1/8 tsp onion powder
1 - 3 tsps dried basil (to taste)
1/2 tsp sugar or other sweetener
1 cup soy creamer (if sweetened, omit sugar)
1 Tbs veg Parmesan (optional)
In a saucepan, put tomatoes, seasonings, and
sugar.
Simmer for 15 minutes, stirring frequently.
Put in processor or blender, add soy creamer, and
process to a smooth consistency.
Return to pot, and heat until hot. Do not boil.
Serve, topped with a sprinkling of Parmesan, if
desired.
