You could mix the dark chocolate with vegan
white chocolate (it exists). That gives
a more mellow flavor. Or mix both types
of chips (or chopped bars) into the cookies
or bars. Adding raisins also mellows out
the taste of dark chocolate.
What I would do to avoid the "melts-in-your-hands"
problem is, rather than coat cookies and candy
bars with chocolate, just mix the chocolate bits
into the bars and cookies. That's what I
would do.
BTW, chocolate coating on candy is often mixed
with interesting things like wax, to prevent
melting in hands, pockets, etc.
