Bulgur Salad

Pour 3/4 cup boiling water over
1/2 cup fine bulgur.
Let stand 20 - 25 minutes
(bulgur should be soft, and
water absorbed).

Mix with chopped nuts,
salad greens, chopped
parsley and/or mint leaves,
chopped cucumber, chopped tomato,
and chopped onion.

Dress with olive oil, lemon juice,
salt, pepper, and a pinch of
allspice or cinnamon.
