i've been making some cookies and candy bars covered in dark chocolate. just melting vegan choc chips and pouring it on. i did a couple recipes that would be much better if the dark choc was a little less harsh. can you think of any way to mellow out the flavor of vegan choc chips?
and any way to make the choc more stable? it seems to be more sensitive to heat after i melt the chips. the choc melts in your hand as you are holding it.
