Eggplant with Pomegranate Sauce
3 long, slender (Japanese) eggplants
1 cup pomegranate juice*
1 clove garlic, peeled and mashed
Dash rosemary
Salt and pepper
Poke holes in eggplants.
Bake at 350 F until very soft.
Cool somewhat, then remove pulp, and mash.
Put pom juice in a small saucepan.
Cook pom juice slowly, stirring,
until reduced to 1/2 cup*.
Add remaining ingredients.
Mix with eggplant pulp.
Serve hot or cold.
Great over rice!
*Or use 1/4 cup pomegranate paste
mixed with 1/4 cup hot water
in place of cooked-down juice.
