Subject:         Chocolate Frosting

Chocolate Frosting

1/3 cup margarine, room temperature
1 - 2 tsp vanilla
Soymilk (if needed)
1/4 cup cocoa powder
Small pinch of salt
1 lb confectioner's (powdered) sugar (more, if needed)

In a large bowl, cream the margarine until fluffy.
Mix in the vanilla.
Mix in the cocoa powder and salt.
Add the sugar gradually, to desired consistency,
adding a few drops of soymilk, if needed, for blending.
Beat until smooth.
Use immediately.


For a stronger chocolate flavor,
mix in 1/4 tsp chocolate extract/flavoring.


VARIATIONS:
Mocha Frosting: Add instant coffee powder to taste.
White Frosting: Omit cocoa. Increase vanilla, if desired.
