Put the freshly-made polenta into a
square pan and chill it for 1 hour.
Slice carefully.
Fry in pan spray or a little oil
over medium heat.
Use one of those bacon-shields
(like a flat strainer) for extra
protection, if necessary.
If all else fails (still spits),
wear goggles. Seriously.
