Subject:         success in frying polenta?
Date: April 2, 2008 at 4:56 am PST

i made some polenta and dumped it into a bowl to set up for ten minutes. I cut it and it held together pretty well, but when i went to fry it, it popped and flung tiny bits at my face.
there was maybe 1/8in of oil in the pan, and it was just under high heat setting. should i try frying it with less oil, maybe just an oil spray? should the heat be lower?
should i just use a pot lid as a shield?
