This is yummy: Slice thin and have on rye bread with cranberry relish (the kind made with oranges). Another recipe I do many times is to make "Green chilie enchiladas" by chopping it up, mixing with the "cream" of mushroom soup recipe below in the posts, some tofutti sour cream and a can or two of green chilies, wrapped in softened corn tortillas, more mushroom soup and sour "cream" poured over the top, and baked until bubbly.
