i have been trying to figure out the best way to make tofu and swear that this time i will find it. I have heard it is best to freeze first, which sounds good to me. However, should I freeze my water-packed tofu package and all, or should I drain the tofu first? And secondly, what is the best way to drain water-packed extra firm tofu? Whenever I try to do it, the tofu still seems soggy and then therefore, unappetizing. Please help. Thanks so much!!!
