Rich Cocoa Pudding 2 cups soymilk, rice milk, or almond milk 1 cup natural sugar 1 Tbs cornstarch 1/3 cup cocoa powder 1 tsp margarine 2 tsps vanilla or other extract Dash salt Mix cornstarch with the 'milk. Put all except extract into a saucepan. Cook over medium heat, stirring constantly, until mixture comes almost to a boil. Turn down heat and simmer, stirring constantly, until thick. Turn off heat. Mix in extract. Serve hot or cold. NOTE: If thicker pudding is desired, mix 1 tsp cornstarch with 1/4 cup liquid, and add to pot. Cook, stirring constantly, until desired consistency is reached. VARIATION: Carob Pudding Use carob powder instead of cocoa powder.
