I know Dr. Fuhrman's philosohpy on food very well and I've read most of his books. I think it's great the guy has been able to help so many people through his diet. However, I have a bit of a problem with his approach. My body has a hard time maintaining it's weight through his recommendations. And the restriction of starchy carbs also leads me towards constipation. So, I still feel like I do best on a diet that includes...
Mostly: Whole grains (wheat, oats, rice)
Plenty: Beans
Some: Veggies (steam cooked)
Minimal: Fruit (stewed)
A little bit: Dairy (Cheese, Yogurt)
A little bit: Meat, Fish, Eggs
Ideally None: Anything man-made
In my opinion, Dr. Fuhrman's diet seems like it would really benefit someone on the heavier side. But for someone like me, who is already thin and has a hard time gaining weight as it is, I question if it is A. practical, B. Healthy.
