No pineapples are picked ripe (though they should be), but they will continue to ripen a tad, at least.

If you have a place to do it, try sunning your unripe fruit. Works wonders on pineapple, bananas, mangos... there pretty much isn't anything that it doesn't work wonders for, you just have to switch up the amount of time depending on the ripeness and type of fruit.
