I've been gaining more experience with pineapples lately, but I'm still not an expert.

A few things I've heard and noticed:

They don't ripen much after I buy them, so I get the ripest ones possible in the store, and if they aren't ripe enough, I pass on them. Next time I look for a better brand or better ripeness. Sometimes I leave the store without any.

Once I get them home, I put them out on the counter, with the leaves still on, but turned upside down, resting on the leaves. I read somewhere this distributes the sweetness. And so far, it does seem to help.

Eat them within a few days. They don't get much better, just start turning brown (rotting, I think.)

Some brands of pineapple are just not picked ripe. After a couple failures with a certain brand of pineapple, I won't buy it again. I stick with the brands I know have tasted good in the past.
