Subject: Carbohydrates and ptyalin

Just wondering about something i have read once. That the salivary enzyme alpha-amylase (ptyalin) is not produced by the glands in the mouth if you eat starches together with simple sugar. Because when the simple sugar is recognised by the taste, there is no need to add ptyalin to break starches down.
All fruits do have some (even if very small) amount of starches, when you eat them do you produce ptyalin or not? Or is it the pancreatic amylase, that in case of missing alpha-amylase and presence of starches does the late work in the duodenum? Pancreatic amylase is secreted every time we eat, the ptyalin is not? Also read that only 40% of starches can be broken down in the stomach under the influence of ptyalin. Does it all mean, that ptyalin is maybe something we didn't have from "the Start" (as is the case with another enzyme lactase)?
