The key is to ferment them at a suitable temperature for a couple of days without it rotting. During winter l can never get the same results as in the warmer weather.

Around 22 degrees C is good for a 2 - 3 days, hotter weather of over 30 degrees is o.k when fermented for 1 - 2 days.

Sometimes mold may form on the top, but remember that this is only on the top because the low ph of ferment will kill molds. What you sometimes need to do is scrape it off, clean the sides of the jar etc and pour the fermented nuts into a blown or blender for consuming. Some tops of various nuts may even get mold on them so may sure they are weighed down so they are underneath the water.

Ferments have done so much for me in terms of digestion, but they also can increase B vitamins by up to 50%, improve zinc bioavailability by up to 600% (sprouted fermented wheat study), increase iron bioavailability by up to 1,000% (sprouted fermented wheat study) and improve bioavailability of many useful minerals along with balancing out protein and giving the body a range of beneficial acids which perform roles too extensive to talk about here.

Zinc and iron are hard to get good levels of in the raw vegan diet, so seize upon the opportunity and get highly bioavailable zinc by fermenting zinc rich nuts and sprouted seeds. Fermented pumpkin seed yogurt is another good one.

And please...don't believe these dubious blood tests that say you are o.k. Why? Because most blood work done only measures what is in the blood and NOT what you are absorbing. And assuming you do a spectra test (what you absorb) it doesn't mean you are getting optimal levels of nutrients because people have different requirements for nutrition. The key is high nutrition, FRESH foods and good balanced nutritional synergy.

Then people will bring up the laughable alkaline/acid issue, but if you read the medical literature you will find the original scientist who brought this dubious idea to the public (Wachman in 1968) was full of pseudoscience. HOWEVER....we need to be careful of excess aldehydes, so we need to avoid having them every day, drink good quantities of water and consume the amino acid cysteine which will help protect us from aldehyde poisoning and nutrient synergy disorganisation.

I could go on and on about this stuff, but l better button my lip because l have much to do today and am now much behind in my work.
