This is really a non-issue in my mind, and likely for anyone who knows how the publishing world works. 99% of books credited to people who aren't professional writers have been written by others (ghostwriters usually, but also heavy input by editors, etc.). Every autobiography you've ever seen, every memoir, every political speech or book, etc., etc., weren't authored by the person credited on the book. The same goes for the vast majority of diet books. That's just how it works.

It's this way because most often the people with the knowledge aren't also skilled writers. So they hire writers to bring their ideas to print. Very often there are non-disclosure agreements signed with the publishing company, so that even if someone wanted to tell the truth down the road, they'd be setting themselves up for a hefty lawsuit if they did.

In Doug's case, it doesn't really matter if he wrote the words; they're his ideas and he's stood by them for years. So, it's his book and his diet/lifestyle plan in my view.
