1. Cold food definitely digests more slowly.
2. Natural raw peanuts are not the same as other nuts, they are technically legumes that are constitutionally very close to nuts, but have lower fat content and higher carb content. They are challenging to digest. Fresh raw peanuts taste quite "green," meaning they seem unripe. Raw peanuts as sold in stores have been dried, and subjected to some heat. Peanuts can definitely have mold issues, and so can some other types of nuts.
3. I rarely soak nuts, but often blend them. I do know a few recipes that call for soaking the nuts in order to create the specific texture I desire.
4. Fruits and vegetables are health foods, and none are specifically better for you than others, though some have specific qualities that could make them preferable if you are looking for those qualities.
For instance, some fruits have more Vit C than others.
Some fruits have more sugar than others.
And on and on.
