I assume you mean eating, not preparing, them? If
your mouth and stomach cope with something so acid as
lemon, could it be worth preparing them using food
prep gloves?

I find the acids in citrus (and usually tomatoes) make
my mouth bleed, and area around the nail becomes puffy
from inflammation.
