My friend Andrew Perlot made two great videos that
answer your question.

Basically, the RDA numbers inlclude far safe margins
and they neglect that even though there is signifiant
amount of some nutrients in certain foods, the
composition of that food is not suitable for human
absorption of nutrients from them.

For ex. there is a fair amount of zinc in grains, but
there is also phytic acid that binds minerals and thus
render them unavailable for the body.
