You are correct that some of your levels should be lower than recommended, simply because you do not eat meat. Aldosterone should be higher, too, as you are not a salt eater. I can't guess about your health though, and wouldn't even make an evaluation without a full history. Typically, if someone has "all the symptoms" of something, you can generally assume that they "have" that something.
Do you get enough sleep?
What is your diet, exactly?
There are many questions to ask about your overall lifestyle, but this board is not the place. Such sleuthing is generally done through private consultation. Your situation sounds serious, not to be ignored. Have you checked your blood sugar levels?
What further tests has your doctor recommended?
