Hi Yogi, I am so sorry….I really can't give you a specific source for
this. I've read about this in books, online, from talks, over the years.
Also, I've read many testimonials on various forums from people
whose teeth were affected by consuming unripe citrus and other
fruits. The next time though I read anything about this, I will
definitely pass it on to you here on this board.

The "veggies" you mention are actually fruits, but are treated like
veggies. Tomatoes can ripen on your counter. I don't believe cukes
and zucchini ripen after harvested. A ripe cucumber has a lot of seeds
and is juicier and tastier than an unripe one. A bell pepper, another
veggie kind of fruit is green when unripe and turns either red, orange
or yellow when ripe. The green ones are usually cooked cos they don't
taste that good raw, whereas the other colored are eaten raw in
salads, etc.
