Many plants add protective chemicals to their mature leaves. They've invested a lot of effort into growing them, and want to keep them, so they make them less palatable.
I can't speak for the oxalic acid question. Do you mean by weight, volume, calorie, per leaf, or what, do you know? Even then, I couldn't really tell you.
