Subject:         baby vs full grown greens questions

I find that with some of the full grown greens, the baby versions are much more
tender and easily eaten in a salad. So, I can eat baby kales or chard, for
instance, but cannot stomach full grown ones.

--What is it in the full grown ones that give them the bitter taste (which some
people enjoy!)

---Do the baby versions have less oxalate acid than the full grown ones?
