I'd recommend resistance bands over water bottles. Water is big and bulky and messy, and doesn't weigh that much unless you carry big bottles.
Weights are objective. Most people find with deadlift that they can easily lift their own weight, or nearly their own weight. Double your weight is a strong lift. Triple your weight is uncommon.
But a gallon of water only weighs 8 pounds, so you'd likely be looking at two 5-gallon bottles, at minimum.
