I had to reply to your question because I found it
so sweet!!!!! :)))))

I never even thought of that... I never eat cucumber
skins (unless on small cucumbers) and I generally do
not make myself eating anything that is not
appealing to me, no matter how much nutrients there
are.

Please see the other side of the coin... Nutrient
content of some food is one thing, but how much u
really absorb is another. If u eat something that
your body doesn't enjoy, it will adversely affect
your digestion and assimilation of nutrients.

From my experience, I have different phases of food
preferences. Usually, I eat a couple of things in
one "phase" which lasts up to a couple of months,
wanting nothing else, and then my body (without
asking me) just switches to a different mode,
seeking a couple of new things that were not
appealing to me before! Luckily, these phases follow
the seasons and my body knows to choose from the
palette of foods for human species (foods that are
appealing to us in their natural form). :)

So enjoy what you want now and enjoy not eating what
u don't want now! :)

And of course... stick to the fruits and tender
greens.

I agree that Israeli Salad looks delicious in that
non cook book!
