I've read many different opinions regarding thai coconuts, none official. I prefer coconuts that aren't suspect.
I've heard stories of people coloring the coconut water with food dye that seeps in through the coconut, but again, I don't know this for fact.
There certainly is no smell of formaldehyde. I cannot address the sodium metabisulfate question with certainty. I do know that thai coconuts go "bad" in ways that other coconuts do not. They go blue or brown inside, a phenomenon that always leaves me wondering what's going on. Not good.
