There was no response to this question so just in case it was simply missed, I"m
reposting it here. I don't mean to be insistent with this, it's just that I and so
many people I know who love these thai coconuts wonder about their health
safety. I believe the big question is whether the sodium metabisulfite makes its
way into the coconut "meat" and water. If anyone has some feedback on this
issue, I'd love to hear it! Thanks :)

""There has been controversy on the internet regarding how safe it is to consume
the water and "meat" of young Thai coconuts. Perhaps some of it is simply
rumor.

At first I read that these coconuts are dipped in formaldehyde. Recently I've read
that this is a rumor and it's actually sodium metabisulfite, used to preserve foods
and wine, as well as to bleach paper and textiles. Apparently, the protocol is to
dip the young coconut in this solution for 3-5 minutes, drying it and then
wrapping it in the plastic before shipping it off on long journeys to market.

There is a report on the web of someone testing whether this solution actually
makes its way through the thick husk and shell into the water and meat by
dipping a coconut in dark dye for 3 hours. The reported result is no dye passed
through.

Dr. D, and anyone else, do you have any reliable knowledge on the health safely
of consuming these coconuts? Do you drink the water/eat the meat?"
