I can't comment on the German research you cite, because I've not read it. Where did you find that info?
Enamel is tough, and doesn't erode quickly. Certainly exposure to fruit won't erode enamel, unless we aggressively and repeatedly use extremely acidic fruit. The sugar of fruit does not cause decay, but the bacteria that eats the sugar can result in tooth decay if the teeth are cleaned of excess sugar on a regular basis. 80/10/10 does not replace the need for oral hygiene.
I am not aware of tooth issues being shoved under the carpet. How much more openly should tooth issues be discussed, do you believe? In the 20 years I've been running this board, we've discussed dental hygiene perhaps 500 times.
On most western diets, gums are inflamed, which masks erosion of gums. Some people find that with 811 the inflammation goes down, and sensitive dentin (non-enameled areas of tooth) is exposed. 811 didn't cause this problem, rather the problem was unmasked as a result of eating 811.
I have no idea what has occurred in your situation, but can guarantee that a 1 day of eating fruit and vegetable fare did not result in tooth decay.
