Nice finds on the journal articles though. Good support for DG's original statement, and the mechanism behind this relationship.

higher fat consumption--> reduction in glucose transporter 4 expression --> hyperglycemia -->deleterious effects on hemoglobin

The relationship is clearly there, but the dynamics are still kind of obscure for someone with limited understanding of physiology/biology. But that's enough information to help develop a detailed understanding I think.

Rather than an overall "sludging" effect, it seems resulting hyperglycemia is what somehow degrades hemoglobin function. More complicated than what I was (perhaps naively) expecting, but fascinating.

Would love to hear an expert's portrayal of this mechanism to a layman.
