You're telling me a physiology text is going to explain the relationship between fat content in the blood and blood-oxygen level? Call me foolish if you like, but I don't believe that.

You find in a physiology textbook where the dynamics of this relationship are clearly explained, and the correlation between fat content and blood-oxygen levels is also explained (higher fat equaling lower blood-oxygen and vice versa) and I'll give you $20 and humbly apologize for my labeling Doug's response as curt.
