I certainly keep my dates in the freezer; they go bad
quite fast if left out. Then I transfer small batches
to the fridge, so they soften a little prior to
consumption (though they are nice straight from frozen
too :)).

All food loses some nutritional content for being
frozen, but there is no better way to store foods that
spoil, long term.

When you buy your dates, why not ask the date company
for further info and recommendations? They are
generally helpful.
