Subject:         Confused about the metabolic process of carbs

Hi Dr Graham

First I want to tell you how grateful I am to be able to attend your online
bootcamp !! I've just joined and watched module 1 and 2 and module 1 of
"making friends with your food". Both series are very VERY inspiring, giving me
new intelligible perspectives about my food and eating behavior. Thanks a
million!

I have a tough time understanding the metabolic process of carbs. I found info
on anabolism/catabolism on the web, but it doesn't explain why we can eat all
the fruits we care for as you often put it, and still loose weight/fat.
If I just think about the quantities of fruit/glucose I have absorbed over the 2
last days, surely my liver converted a lot into fat... ?

I opened an account on Nutrydiary.com as recommended.

It is a bit scary because my Basal Metabolic Rate and General Activity summed
are of 1170 cal. I must save 330 cal a day to hit my weight loss target.

If I eat to my "hearts desire" I eat about 2000 - 2200 cal. I've tried eating less
on Day 1 and I got real hungry and frustrated, so I followed what many people
in the raw vegan community say: basically "eat all the fruit and vegetables you
want, just avoid fat."

The problem is that the system tells me 2 contradictory things:
1. to loose the extra kilos I should eat no more than 880 cal/day,
2. eating less than 1200 cal a day is dangerous.

So when I've logged all my food, I've eaten over 1000 calories in excess, which
would be gaining about 1 kg in a week!!!

I have double checked my personal data and it is correct. The weight loss goal
isn't crazy either: 250 gr/week. I have about 30% of body fat and my goal is to
loose 10% of that fat, which is about 7.5 kg. I'm a 40 year old female measuring
1m73 and weighing 72 kg. Exercise wise, I try to hit the gym 3-4 times a week,
but if my baby is ill or has bad nights I am too tired to get to the gym, which
was the case last week for instance.

So how do I go about all this??
