Subject:         Fructose and liver? Denaturated protein?

I got the 811 book for christmas, read it all the way through
and I loved it. I already heard about it before but the book
realy helped to get everything straight. I try my best to eat
as much fresh fruit as possible, even though I am not 100%
raw. However, I have two questions:

1: I am currently doing a training to be a nutritionist. Today
in school our teacher told us that the liver is just able to
deal with a certain amount of fructose, about 40g a day. How
does that fit in with the 811 program, as you easily consume a
lot more than that? How can fruit be our natural food if our
liver can't deal with the fructose in it? He said that you
could damage your liver if you eat more than that and that you
won't be able to regulate your blood sugar any more?

2: You say we shouldn't consume cooked protein as the heat
denaturates it. However, even if we eat raw protein, doesn't
the acid in the stomach denaturates it anyways?
