I have no reason, no even one, to think that any given single fitness stunt, no matter how terrific or how demanding, bears any relation to the overall health of the individual.
Many of the most talented athletes I have seen perform often were diagnosed with serious and even life-threatening conditions. Just because someone is good at running, basketball, or whatever, does not mean that they are healthy, or "thriving," as you put it.
As Derek says, it would be interesting to see how far he could run on 811. It will prove interesting to see how long his career lasts on higher fat diets, or how long he even bothers continuing to eat that way.
