You are confusing two different issues, as if they were one.
Yes, unripe fruit can contain tannins, proteolytic enzymes, and other factors that would discourage their premature consumption. This is quite a different matter, however, from eating an early-picked fruit that has then ripened off of the tree.
Ripe is ripe.
