I live in the UK, and we get GREAT cucumbers all winter, or at least reasonable ones are reliable. OK, tomatoes go downhill, but they do that everywhere. Lettuce and celery remain terrific, and usually so do courgettes.
I'd say just keep eating your veggies as normal, but choose the ones that are best at the time. I don't recommend cooked, no. If you can find great fruit, enjoy it.
