Not meaning to answer a question with a question, but if you "feel fine on 7 hours sleep," why do you think your body sometimes encourages you to take 11 hours? That should be a major clue, I would think.
Usually the answer is that on 11 hours, you are finally getting in touch with how tired you truly are. Not knowing about the remainder of your lifestyle (fitness, work, etc) it is very difficult to give any guidance as to how much sleep is appropriate. The generic response is to sleep until you honestly don't feel you can or care to sleep any more.
