Hello, Dr. Graham

What is your opinion about homemade salt-free sauerkraut?
Some people say it's just rotten cabbage, others say it's still living food and a natural probiotic and even a source of vitamin B12.
I made salt-free sauerkraut as I was curious about the taste and it turned out very tasty.
Would you say it's really raw and ok to eat or the other way around?
