One of the gourmet raw food recipes I used to really like was
massaged cabbage in any form, but it's done with oil and salt. Now I
have found a way to do it on 811, which I think it's quite delicious.

Basically you can use any cabbage finely cut, ad some fine cut dates
(or if you can tolerate it maybe some other dried soaked fruit) and
some juice or fine cut pieces of lemon/lime/oranges etc. Then you
massage it well as long as you care for with your hands (the same way
as if you are baking bread). Maybe 5-10 minutes. When I do it for
myself I just wash my hands first. If it's for guests, I put it all in a
plastic bag (for food use) and massage it.

Combinations I have tired so far:
Tuscan kale (a bunch), 4 big medjool dates, 3 tangerines.
Broccoli, dates, juice from 1/2 lemon.

Good luck!
