I've grown a fair amount of pineapple, and been to several plantations. Peak ripe fruit will go golden. Most people eat pineapple early.
You are stuck and have to make the best of your situation. Sunning helps a bit. I don't have a number for "how much." I typically sun my pineapples here in the UK for at least several days before eating them. They yellow, from green, over time. Does this mean that they ripened? No, not exactly, but they do get a bit sweeter. Of course, there is no way to tell, exactly, how sweet the same pineapple would have been...
