Your body uses different fuels at different levels of intensity, yes. All out anaerobic effort is fueled by sugar, but you can only keep up such efforts for a few seconds, maybe 20 seconds at the most, but more likely only 5-10 seconds, tops.
As exertion levels vary, so does fuel, but not much, and even less when averaged out through the day. By day's end, you'll end up very close to 50/50, regardless of the bit you use when exercising.
