What exactly is it in vegetables that we need? Other than
it's vegetable-ness of course, which is essential. Im
looking at nutrition charts and find that there are not any
nutrients really "missing" from fruits, would you say that
the essential part of eating vegetables are mechanical in
nature? Fiber, chewing etc? Suppose I get enough
sodium from coconuts for example.

for the record, I usually look at nutrition based on foods,
not foods based on nutrition, but I find it very
entertaining to crunch the numbers also!
